Ingredients:
- 60 oz of canned sweet potatoes, drained
- 1/2 cup softened butter
- 1/4 cup brown sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 bag of small marshmallows
Directions:
- Preheat oven to 325 degrees. Spray 9 x 9 pan with nonstick spray.
- In a mixer, combine sweet potatoes, butter, brown sugar, egg, and vanilla. Mix until smooth. (**if consistency is too thick, add a little bit of milk**)
- Pour mixture into the pan. Top with mini marshmallows.
- Bake for 20-25 minutes until casserole is hot.
