Ingredients:
- 45 oz of canned sweet potatoes, drained
- 1 cup softened butter
- 1/2 cup packed brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup pecans (chopped)
- 1/4 cup toasted coconut flakes
- 1/4 cup of raisins
Serves: 4
Directions:
- Preheat oven to 325 degrees. Spray 9 x 13 pan with nonstick spray.
- In a mixer, combine sweet potatoes, butter, brown sugar, egg, and vanilla. Mix until smooth. Pour mixture into the pan. (**if consistency is too thick for your liking, add a little bit of milk**)
- In a small bowl, combine the pecans, coconut, and raisins. Once combined, top the casserole with this mixture.
- Bake for 20-25 minutes until casserole is hot.
